French Toast Casserole
Recipe By: Quick Cooking Magazine, 2/2000
Serves 12

10 ounces french bread 1-inch cubes
8 large eggs
3 cups 1% low-fat milk
4 teaspoons sugar
1 teaspoon vanilla extract
3/4 teaspoon salt optional

TOPPING
2 tablespoons butter cubed
3 tablespoons sugar
2 teaspoons cinnamon

Place bread cubes into greased 9 x 13-inch baking pan. Beat together eggs, milk, sugar, vanilla and salt if desired & pour over bread. Cover; refrigerate 8 hours (overnight). 30 minutes before baking, take out of refrigerator & dot with butter.

Combine sugar and cinnamon, sprinkle over top of casserole. Cover and bake at 350 degrees F for 45 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Serve with maple syrup, if desired.
